Crispy Zucchini alla Scapece
– Ingredients:
– 8 medium courgettes
– 500ml sunflower oil
– 1 garlic clove, crushed with sea salt
– 2 red chillies, deseeded and finely chopped
– 10 mint leaves, finely chopped
– 2 tbsp red wine vinegar
- Method:
- Slice courgettes into 5mm rounds, salt them, leave for 10 minutes, rinse, and dry thoroughly.
- Fry in batches in hot sunflower oil for 2-3 minutes until crispy.
- Mix with garlic paste, chillies, mint, and vinegar.
- Serve as a snack.
