Noma to close for transformation into food lab Noma 3.0

Renowned restaurant Noma, led by chef René Redzepi, will close this winter to transform into Noma 3.0, a food lab set to reopen in 2025, while also launching a new Apple TV+ series exploring global food issues.

Renowned fine dining restaurant Noma, led by chef René Redzepi, will close its doors in Copenhagen this winter. The restaurant plans to reopen as Noma 3.0 in 2025, transforming into a food lab that will occasionally serve as a pop-up venue. Redzepi aims to create a leading entity focusing on flavor and making positive changes in the food sector through this new concept.

Noma, established in 2003, has been celebrated for its innovative use of seasonal, local, and foraged ingredients. The restaurant has been named the best in the world five times and holds three Michelin stars.

Redzepi is also involved in a new Apple TV+ food and travel series, “Omnivore,” premiering July 19. The series, co-created with Emmy Award-winning producer Matt Goulding and “True Detective” director Cary Joji Fukunaga, explores the impact of ingredients like salt, coffee, and chili peppers on global cultures and economies. Episodes highlight the journey and significance of each ingredient, offering insights into the global food chain and its challenges.

“Omnivore” draws inspiration from David Attenborough’s “Planet Earth” and reflects lessons from the late Anthony Bourdain, aiming to inspire appreciation and respect for food. The series showcases various food-related issues and emphasizes the importance of balancing traditional knowledge with modern advances for sustainable food practices.
